Veggie Pot Pie

Serves 3-4

Ingredients

  • 1 TB vegetable oil
  • 1/2 yellow onion, chopped
  • 1 clove garlic, chopped
  • 2 cups vegeterian broth
  • 1/4 cup Original nutpods
  • 1/8 cup flour
  • 2 bay leaves
  • 2 cups mixed frozen vegetables
  • salt and pepper
  • Frozen puff pastry

Instructions

Heat vegetable oil over medium high heat and then add onions and garlic. Sautee until softened. Add flour and whisk until cooked out, about 1 minute. Add broth and stir until blended. Throw in bay leaves and add nutpods and stir until thickened, adding more broth if need to get the consistency of a cream soup.

Add vegetables and cook through, about 3-4 minutes, while adding salt and pepper to taste.

Discard bay leaves and pour mixture into ramekins or casserole dish. Top with puff pastry and cook according to pastry box directions. Enjoy!
