Ingredients
- 1 TB vegetable oil
- 1/2 yellow onion, chopped
- 1 clove garlic, chopped
- 2 cups vegeterian broth
- 1/4 cup Original nutpods
- 1/8 cup flour
- 2 bay leaves
- 2 cups mixed frozen vegetables
- salt and pepper
- Frozen puff pastry
Instructions
- Heat vegetable oil over medium high heat and then add onions and garlic. Sautee until softened. Add flour and whisk until cooked out, about 1 minute. Add broth and stir until blended. Throw in bay leaves and add nutpods and stir until thickened, adding more broth if need to get the consistency of a cream soup.
Add vegetables and cook through, about 3-4 minutes, while adding salt and pepper to taste.
- Discard bay leaves and pour mixture into ramekins or casserole dish. Top with puff pastry and cook according to pastry box directions. Enjoy!
