Even though they sound fancy, crepes are the perfect everyday food. They are surprisingly easy to make, and can be served sweet or savory. Wrap a sweet crepe around fresh fruit or jam for breakfast or drizzle with chocolate or powdered sugar for dessert. For a quick dinner or lunch, fold chopped fresh herbs into the batter and fill the crepes with sautéed vegetables.
Combine all ingredients in a blender or bowl and blend until smooth.
Lightly oil the surface of a crepe pan or 8-inch skillet over medium heat. Add about 1/4 cup batter to the pan and quickly swirl in a circular motion to coat the entire surface. Cook until the edges just to start to pull away from the side of the pan and the bottom turns golden, 2 to 3 minutes. Carefully flip the crepe over and cook until golden, 30 seconds to 1 minute more. Lightly reoil the pan as needed between crepes.
Serve with your favorite sweet or savory fillings.
